Interview with Tim Barford.  Founder of VegFest UK

With our GIVEAWAY currently running (have you entered yet?) for free tickets to VegFest London 2013, I thought it would be interesting to find out just how an idea becomes a festival. Also how one man morphs into an entrepreneur, and head honcho of everything hemp. 

Tim Barford kindly found some time out from running Yaoh and managing London Vegfest, to answer a few burning questions I had for him.

Why did you set up VegFestUK?  I set up VegfestUK back in 2003, just for the crack really, seemed like a good idea for a party at the time. The vegan thing was obviously a lot smaller then so it seemed a really good idea to get it all in one place and then throw a big party around it and invite everyone to come. It’s worked a treat. Loads of people have taken their first steps towards a veggie, flexi or vegan lifestyle by coming to one of our events.
How and where did it begin?. 
The first show was in Bristol at The Watershed on November 1st 2003 – we had 40 stalls, and around 1200 visitors, plus about 300 more in the bar next door! We had a room for live music and  some demos, and also a talks room, and it went from there. There was a classic moment when a Pink Panther went round the whole show and gave every stallholder a glass of champagne – that Panther must have known what was around the corner for VegfestUK, its turned out to be an incredible success story on every level.
How it has expanded over the years, as in venues and attendance numbers?
The first few years the show grew but not dramatically – we moved to the L shed in 2004 and the show grew to 80 stalls and around 4,000 visitors which was amazing. 2005 and 2006 continued at The L Shed with similar numbers and then in 2007 the L Shed shut and we moved over the river to our current home, The Amphitheatre. This gave us room to expand as it was all outdoors, and we now have a regular 140 stalls and around 20 – 25 000 visitors over the 3 days. It’s wonderful. Brighton has expanded too, with 135 stalls and 7,000 visitors since its launch 5 years ago. And with London in its first year, we await to see how that will go, as it stands a month ahead it’s looking like a cracker
Have there been any knock on effect achievements because of the Fest?  Lots of other shows including the West Midlands and the North East Vegan Festivals have taken inspiration from our shows and gone off and started their own, which is really amazing. And a lot of people have started eating more vegan food after coming to our events – hundreds of thousands of people. And with our media and PR presence growing every year, we are reaching more and more people through a lot of different channels.
What is your vision for future events?  
My vision for future events is that every food festival in the world is a vegan festival. Might seem a long way off but that is what I am working towards. Meanwhile we’ll keep what we doing and keep it interesting and going, it’s got its own energy now, the vegan thing, its growing of its own accord cos now so many people are on this tip. It’s for real.
What is your current favourite meal (is this an impossible question? probably, I can never answer it).  I love hemp (*I should have guessed he’d say that!), especially dehulled hemp seed in smoothies. hummus and pitta with salad and olives. And noodles with chilli and garlic. Just discovered raw courgette noodles and a raw pesto which is pretty cool.

VEGAN COOK OFF - The Great Moshi Vegan Challenge - 2012

Life is rather good when you get invited to come along and judge a vegan cook-off.  I’m making that sound grander than it is.  I was 1 of 100 judges (diners) nevertheless, I took my assignmentVERY seriously!
  

Down in the ‘oh so famous’ Brighton Lanes lies a hugely successful and innovative Japanese restaurant called Moshi Moshi.  I’d never stepped over the threshold before, thinking it probably wholly unvegan.  But after a scan of the events for the Brighton Food Festival 2012 I was so excited to find a VEGAN cook-off being held there. I thought what a lark…this is a bout I want to witness!
In its 3rd year, the VEGAN Maki Challenge is the brainchild of Moshi owners Kahl Jones and Nicholas Rohl.  The restaurant is not vegan (alas).  BUT they are known for their work in fish conservation and they are actively promoting ‘restorative eating’ by consuming less.  I’d say make it easier and don’t eat the poor fish at all, but KUDOS to them for having no less than 23 vegan dishes on their menu and championing the awareness of over consumption.  Anything that showcases superb vegan eats gets a thumbs up in my book!

All of the entrants had created wonderfully unique recipes.  One of the two desserts took the title.  v-Bites (owned by Heather Mills company Redwood) with their stunning chocolate-ribboned, green tea and pandan ice cream.   Cashew Catering (my personal favourite) wrapped tempeh and chill bean puree in a crusted aubergine and marked the plate with a flourish of horseradish and ginger paste and a wonderfully tart and innovative raspberry and ume sauce.   My other favourite (besides the eye catching ‘broken hearted’ maki from Moshi) was CanTina and her use of a lacy hijiki (a type of seaweed) rice cracker, jauntily leaning on her shiitake maki.  Beautiful!
The other contenders were Yum Tum Sushi,  Sabai Thai, Titbits (VEGAN) and India Summer who also serve up inspired Indian vegan cuisine.
A great night was had by all. The atmosphere was fantastic and the owners Kahl and Nicolas were great hosts.  I’m considering signing up for their 50% off Monday Membership Clube.  Big thanks to Lisa from JB PR who arranged for me to be part of it.  I LOVE my job!

Aloka in Brighton

We all know the value of good friends…..ESPECIALLY when they want to take you out to dinner.  Yippee!

It was a GORGEOUS  bright day…so, quite out of character, I opted for tea and a chat at my favourite pub at the beach before heading up Ship Street to Aloka.  I’d been before but they’d changed their hours, menus etc.  They used to have a Raw Food restaurant upstairs and self service buffet (which was varied and v.good) downstairs.  Alas (BOO!) the buffet is now only served until 5pm.
Hey ho, go with the flow….We were both now ravenous and wanted to get onto the business of eating asap.  So, we ordered chips and dips whilst we waited for our mains.  The waitress came over with something unexpected…The amuse bouche in the first picture.  It was exactly that..amusing for my mouth, though being the fun bunny that I am I could have handled a bit more ‘amusing’.  Cucumbers in a vinaigrette with teeny weeny little cubes of butter nut squash and carrot.  Ha ha.
The chips took a bit to long to come but they were good.  Raw crackers and raw hummus with pea shoots and spinach.  The spoon is cradling olive oil.
For our entree we decided (impressively swiftly..though we may have been swayed by it being the cheapest on the menu), to go for the mezze plate.

Doesn’t it look gorgeous!  The chef was giving it all his love in the kitchen!  The plate was generous (though it wouldn’t have been enough if we’d not spent a happy few minutes plunging raw crackers into the starter).  I cannot remember it all (not so easy to give 100% concentration when nattering with a friend), but there were two types of hummus, soup, crostini, raw crackers, olives and socca bread and a chutney which I didn’t really like as I found the rosemary and thyme mix a bit ‘medicinal’ tasting.

Delicious socca bread (i think?) , made with chickpeas (or that is what it tasted like) and an awesome, grin inducing broccoli soup with garlic oil…I could have eaten a whole pan of that!

Olives, raw tatziki & hummus

The decor is wonderful, the waitresses do all they can to be helpful, and the chef is obvioiusly talented and passionate.  The other mains looked delicious and inventive so I will go back and try them one day.   I must say, with Terre a Terre & Food For Friends only yards away, all three restaurants are a bit samey in terms of £££.  Aloka’s buffet used to offer extremely tasty raw & cooked vegetarian/vegan food at an affordable price (based on weight). Making them a good ‘eat out mid-week’ place. They will now go on my ‘special dinner out’ list.  Which is a shame but I will go to their buffet again (served until 5pm).  I think I got used to having it so good in California…blow your mind food for a lot less dosh.

Iydea Brighton

Sorry to be a typical English person and put the weather at the top of the agenda….. but with only one glorious day to be plucked from the sodden depths of a seaside winter I have been seeking comfort food.  Nourishing, warm and tasty, that’s the Iydea.

Tucked away at the Northern end of the Laines in Brighton is a small vegetarian cafe called Iydea .  It’s not huge, seating for about 30.  The windows steam up from all the hot enticing dishes laying side by side in a hot cabinet.  I’ve gone there nearly every day for their ‘To Go’ soups.  Only £1.90.  Filled to the brim in a recycled cardboard cup.  I’ve been rendered a contented and full bunny by their daily soups.  Roasted Jerusalem artichoke, parsnip, spinach and basil (my favourite)…topped with roasted seeds, carrot and ginger with a sprinkle of roasted carrot shavings and tomato and red lentil with a spoon of vinegared, grated beetroot on the top.  Taking advantage of each lunch time that has kindly held back the flow of precipitation, I’ve sat on a bench nearby and people watched as I sipped these thick heart warming lovelies.

Speaking of lovelies…it fits the description of the staff to a T.  All smiling sweeties…as diverse as their daily specials and guaranteed to leave you happy.

I also had a meal of their..’choose your own mains and salads’.  Rasam…a curried lentil stew type thing..perfectly cooked and spooned over tummy loving brown rice, greens, and pumpkin and parsnip smash….v.v.good.  Simple and good.  Alas, no picture of this but below is the garlic roasted green beans, butter bean & carrot salad, Indian potato salad, carrot & parsnip mash and hummus…..They know their comfort food at Iydea.

Its a cafe and not a candle and waiter service type place but for the wallet/purse conscious, those in a hurry or those needing to be warmed by nourishing food when the Sun is playing hide and seek….it is a winner…and that’s without even telling you that at 4:30pm they put anything left in eco-friendly containers and sell it at a very pleasing price.

Terre a Terre Brighton

A friend was having a birthday.  I do not need an excuse to go out and eat but I thought, ‘why not push the boat out?’ (what on earth has that saying got to do with being extravagant?)….Anyway, so we took a stroll through the Laines to East Street in Brighton.  Destination Terre a Terre.

A vegetarian restaurant with boy, girl owners who like to create innovative dishes to challenge the tastebuds and the misconception of ‘bland’ veggie food (I cant believe that still exists either….)

There is a good selection of vegan dishes and gluten free options were clearly marked.  We opted to share (I hate sharing…what if she gets more than me!) the vegan, gluten free tapas.  

The picture does not do it justice….it was a smorgasbord of tastes, smells and textures (well not literally…not even slightly Swedish but you know what I mean). So creative!

It was such an experience…each selection offered such original flavours.  We really took our time to….savour.  No scoffing or wolfing to be done here.

The Carracotta was a carrot panna cotta (I know!) with tiny pickled beets, a macadamia, lemon thyme soil (hmm, not sure about calling it soil but..) it was lightly chilled and slippery smooth.  The sweetness of the carrot being off set by the pickles.  OOh, yes.

Next, I played mum and we split the smoked Sakuri Mai Fun, it tasted like Asian slaw.  Crunchy, fresh and uplifting.  They gave us 3 Raw Maki sushi rolls…(hello, its for two to share…come on Terre, do the math)  The wasabi built a little fire in my nose for a few seconds and made me laugh.  Me being me would of liked these to be larger….. to get more of an idea of the flavours…not because I’m gluttonous!

The rectangular things were subtle arepa corn cakes.  Shaken in polenta and deep fried. smizzled (like drizzled but in teeny tiny slicks) with chilli chelly (not a typo).  Lovely textures.  Thumbs up.

The twin circular creations were Uttapam.  Indian crumpet with a coconut  and coriander seed butter, and a touch of ginger pickle jam.  These were lovely and tasty, the crumpets were dense and light at the same time….? I don’t know either.

The shot glasses were tomato, vodka shots. Wow!  like a cold shower… in a culinary kind of way.  Alive alive oh! 

Wine for my friend was £4.50 a glass (I don’t drink and I found this a shocking price…that’s the cost of a slice of cake!) The tapas was £21.

Yes, it was delicious.  No, I wasn’t full afterwards.  No, I didn’t order a dessert (£8..a little cheeky).  Yes, I’d go there again.  The atmosphere was great, buzzing and welcoming.  Next time, I’d eat the Tapas for Two for one…all mine!

The Prince George, Brighton

Pre cinema dinner at The George in Brighton.  High expectations for some tasty VEGAN pub grub.  They’ve been all veggie for yonks of years so it’s going to be a wham bam taste party right?!……WRONG!  The atmosphere was the dressing that lifted the dinner a tad.  The food was ok.  But I wanted a full on…wrap me in Sunday, comfort feast.  Noooo…GIVE ME FLAVOUR!

My friend ordered the falafel burger and chunky chips and I opted to put the ‘Sunday Roast’…Butternut squash and cranberry roast with red cabbage, roasties and gravy..on a high pedestal from where it fell.  The potatoes had a nice flavour and were of generous proportions and the cabbage was cooked well in a fruity sauce, but the ROAST was a bit like eating a packet of sage and onion stuffing.  I played ‘hunt the BN squash’ whilst my companion sipped water to appease the salty falafel and hummous and left me to nick his chips to see if I could find some satisfaction for my expectant taste buds….Nope!

It was ok.  Pub grub.  The atmosphere was nice.  If I wanted to indulge in food to make my taste buds dance a conga I’d go elsewhere.  But… for a pub being all veggie though….I take my hat off to them.

Just as well I had a contingency plan and had scoffed a HUGE slab of vegan tiffin earlier in the day! Phew!

Brighton…Infinity Cafe

Back in Brighton.  A Victorian seaside town, dubbed ‘London by the Sea’.  It is a fun place and absolutely chock with Veggie Vegan restaurants.  A pub, one owned my Sir Paul McCartney’s ex-wife, weird named ones… “Why kick a moo-cow”!  Brighton has been a love of mine for a while so I’ve eaten in 99% of the veggie restaurants but not reviewed them before.  There are tons so probably will take a while to get around to them all but I happily take on the task!

My first stop was a ‘no brainer’. INFINITY FOODS CAFE,  I grabbed the last of the soup and a spot by the window up stairs.  It is situated in the hip North Lanes and people watching here is addictive and fruitful.

The gluten free bread was all gawn so I chose to ‘sample’ a rather large VEGAN scone.  Suffering from a miserable cold I was afraid I wouldn’t be able to taste a thing.  The bright colour of the carrot, orange juice and coriander soup was lovely to peer down the bowl into.  It did the trick and my taste buds were doing a little dance of joy.  Though the flavour came in waves (down to the cold and not the fault of the lunch).  The scone was quite good. 
Infinity has a store a few doors up,  and later on I had a slab of VEGAN tiffin.  Not the Indian fayre but a thick wad of chocolate and biscuits.  http://en.wikipedia.org/wiki/Tiffin_(confectionery) .  It has been years since I had tiffin and I did not know they did a vegan version.  It was bloody mighty good.  Thick chocolate, crunchy biscuit and pecan with just the right amount of raisins.  Yummy!
